Rabbit food? A sad leaf of soggy-looking lettuce? A lunch that leaves you starving hungry?

If you’re not overly tempted by the idea of a post-workout salad bowl, it’s time to take a fresh look. With the right inspiration salads can be creative, nutritious and delicious and make the perfect summer meal. So we’ve put together five satisfyingly tasty recipes from around the world. They’re packed with protein. And they also pack a punch. Get ready to change your stance on salad.

1. Mexican bean & vegetable salad

Great vegetarian ingredients give you a salad good enough to rival a burrito or taco, but without any of the heavy carbs. It’s filled with a generous portion of your five-a-day, while protein-rich beans leave you fully satisfied.

What you’ll need

  • Fresh crunchy lettuce (Cos or Romaine are great)
  • Black beans
  • Kidney Beans
  • Organic salsa
  • Avocado
  • Onion
  • Red & green pepper
  • Fresh chilli
  • Coriander
  • Grated cheddar
  • Olive oil
  • Fresh lime

How you make it

  • Dice your vegetables
  • Drain and rinse the beans
  • Mix the beans with the salsa, vegetables, chilli and coriander
  • Season with salt & pepper
  • Want it warm? Simply put it in a pan at a low heat
  • Wash and tear your lettuce then top with the bean mix
  • Drizzle with olive oil, sprinkle with grated cheddar and serve with a fresh lime wedge
  • Rabbit food? Yeah, right…

2. Mediterranean mixed salad

Healthy cured meats combined with fresh vegetables provide a sun-soaked salad that’ll transport you straight to the Med.

What you’ll need

  • Cobb lettuce leaves
  • Parma ham
  • Cherry tomatoes
  • Chargrilled eggplant
  • Chargrilled artichoke
  • Buffalo mozzarella
  • Olive oil
  • Balsamic vinegar

How you make it

  • Wash and tear lettuce
  • Top with sliced vegetables
  • Pull apart your Parma ham and add it
  • Add slices of buffalo mozzarella
  • Finish with a drizzle of olive oil, balsamic, sea salt & cracked pepper
  • Close your eyes and think of the beach

Mediterranean Mixed Salad

 

3. Vietnamese Chicken Noodle salad

Herbs and sauces fill this mouth-watering salad with flavour. Delicious by itself, it also makes a side dish with a difference – ideal for the BBQ or when you want to impress your guests.

What you’ll need

  • Sliced Chicken breast
  • Wombok Cabbage
  • Spring onion
  • Grated carrot
  • Mint
  • Coriander
  • Crushed peanuts
  • Dried noodles (optional)
  • Soy sauce
  • Fish sauce
  • Honey
  • Lime juice
  • Peanut oil

How you make it

  • Pan-sear the chicken breast with peanut oil
  • Chop the wombok cabbage, spring onion, mint & coriander
  • Mix well with grated carrot and half the crushed peanuts

For the dressing in a jar:

  • Mix the soy sauce, fish sauce, a squeeze of honey, lime juice & a drizzle of peanut oil
  • Shake well
  • Top the cabbage mix with chicken breast, the remaining crushed peanuts and dried noodles if you’ve gone with them
  • Add the dressing and tossing well again
  • Garnish with mint leaves
  • Wow

4. Aussie-style lamb salad

The land down under is known for amazing homegrown produce, endless sunshine and a healthy lifestyle (among other things). This recipe combines the lot for a beautifully fresh and filling salad.

What you’ll need

  • Baby spinach leaves
  • Pan seared lamb
  • Roughly chopped macadamia nuts
  • Avocado
  • Sliced mango
  • Marinated goats’ cheese or feta – crumbled
  • Finely chopped mint
  • Macadamia oil (olive oil works too)

How you make it

  • Drizzle some macadamia oil in a pan
  • Flash sear the lamb to your liking (best cooked medium rare)
  • Combine the spinach, mango, avocado, mint, and cheese
  • Once cooked, lay your lamb on the salad mix
  • Throw on the chopped macadamia nuts
  • Finish with another drizzle of macadamia oil, sea salt & cracked pepper

5. Lebanese tabbouleh salad

Inspired by the tastes of the Middle East, this amazingly refreshing salad is absolutely perfect for the summer heat.

What you’ll need

  • Cucumber
  • Tomatoes
  • Red onion
  • Mint
  • Parsley
  • Falafels
  • Feta cheese
  • Fresh lemon
  • Olive oil
  • Garlic
  • Couscous or quinoa

How you make it

  • Boil the couscous or quinoa
  • Finely dice the vegetables
  • Mix the olive oil, garlic and fresh lemon juice in a jar and shake well
  • Once the couscous/quinoa has cooked drain and allow to cool
  • Stir in the vegetables, falafel and feta cheese
  • Drizzle with dressing and mix well
  • Falafel not enough protein for you? Just add the grilled meat of your choice
